Grilled Balsamic Wings with Melted Blue Brie

Grilled Balsamic Wings with Melted Blue Brie

Everybody's wing recipe is buffalo sauce and a cup of blue cheese dressing on the side. This one puts the blue cheese on top, melted, and swaps the hot sauce for an overnight balsamic and herb marinade. It's the same flavors people already want. Just better, and cooked over fire instead of drowned.

Why isn't your seasoning fresh ground? The marinade only works if the herbs are alive. Rosemary, oregano, thyme, sage, and basil lose their oils fast after grinding, and a marinade made with flat herbs tastes like vinegar and nothing else.

Serves 4 to 6 · 15 minutes prep · Overnight marinade · 30 minutes on the grill

Ingredients

  • 3 lb split chicken wings (drums and flats)
  • 3 tbsp Spicy Italian Grandma seasoning
  • 4 oz balsamic vinegar
  • 2 oz olive oil
  • 4 to 6 oz blue brie, sliced (Cambozola or any blue-veined brie)
  • Extra Calabrian chili flakes, if you want them hot

Method

1. Make the marinade. Whisk the balsamic, olive oil, and Spicy Italian Grandma together. Pour off about a quarter of it into a separate container and set it in the fridge. That's your basting liquid, and it never touches raw chicken.

2. Marinate overnight. Put the wings in a zip bag with the rest of the marinade, press the air out, and refrigerate 8 to 12 hours. The vinegar tenderizes while the garlic, rosemary, and fennel work their way in. Don't go much past 12 hours or the acid starts breaking down the texture.

3. Set up two-zone heat. Coals banked to one side, or half the burners on. Wings need indirect heat first or the outside burns before the inside is done.

4. Cook indirect, 20 to 25 minutes. Wings on the cool side, lid closed, turning once. You're rendering the fat, not searing yet.

5. Sear, 4 to 6 minutes. Move them over direct heat and brush with the reserved marinade. Turn often. The sugars in the balsamic will catch fast, so stay with them. Pull at 175°F to 185°F — wings are better past the safe 165°F because the connective tissue breaks down.

6. Cheese goes on straight off the grill. Pile the wings in a bowl, lay the sliced blue brie over the top, and toss gently. The heat coming off the wings does the work in about a minute. Blue brie is soft enough that it doesn't need an oven.

7. Serve immediately. Extra chili flakes over the top if you want them hot.

Why Blue Brie Instead of Dressing

Blue brie has the funk of blue cheese with the fat and melt of a bloomy rind, so it goes creamy over hot wings instead of seizing up the way crumbles do. You get the flavor people order buffalo wings for, without a puddle of cold dressing flattening everything it touches.

If you only have blue cheese crumbles, scatter them on and give them 2 minutes under the broiler instead. Not the same, still good.

What's in Spicy Italian Grandma

Rosemary, oregano, garlic, sea salt, black pepper, fennel, Calabrian chili, thyme, sage, and basil. Fennel is the one people can't place — it's what makes this taste like Italian sausage instead of pizza seasoning. Ground fresh in small batches and stamped with a Born-On Date.

FAQ

How long do you grill chicken wings?
About 25 to 30 minutes total. Cook them 20 to 25 minutes over indirect heat with the lid closed to render the fat, then 4 to 6 minutes over direct heat to crisp the skin. Pull them at 175°F to 185°F, which is past the 165°F safe point but where the connective tissue finally breaks down and the meat goes tender.

What temperature do you grill wings at?
Aim for 375°F to 400°F at the grate. Hotter than that and the skin burns before the fat renders. If you're using charcoal, bank the coals to one side and start the wings on the cool side.

How long should you marinate chicken wings?
8 to 12 hours is the sweet spot for an acidic marinade like this one. Two hours will flavor the skin. Past 12 hours the vinegar starts breaking down the surface of the meat and the texture turns mealy.

Can you marinate wings overnight?
Yes, and it's the best way to do these. Overnight gives the garlic, rosemary, and fennel time to work into the meat instead of just coating the outside. Keep them refrigerated the whole time.

What's a good balsamic marinade for chicken?
Two parts balsamic vinegar to one part olive oil, plus an Italian herb blend heavy on rosemary, oregano, and garlic. This recipe uses 4 oz balsamic, 2 oz olive oil, and 3 tablespoons of Spicy Italian Grandma for 3 pounds of wings. The vinegar tenderizes, the oil carries the herb oils onto the meat, and the sugars in the balsamic caramelize on the grill.

Can you baste with the marinade you soaked the chicken in?
Not without boiling it first. The safe move is to reserve a quarter of the marinade before the raw chicken ever touches it, and use that for basting. Anything that held raw chicken needs a full boil for at least a minute before it goes near cooked food.

How do you melt cheese on wings?
Let the wings do it. Blue brie is soft enough that the heat coming straight off the grill melts it in about a minute — pile the hot wings in a bowl, lay the slices over the top, and toss gently. If the wings have already cooled, give them a minute in a hot oven or back on the grill with the lid closed.

Can you put blue cheese on top of wings instead of dipping them?
Yes, and melted is better than crumbled. Blue brie like Cambozola has the funk of blue cheese with the melting fat of a bloomy rind, so it turns creamy over hot wings instead of seizing up.

What cheese melts well on chicken wings?
Blue brie is the best of both worlds here. Straight blue cheese crumbles don't melt smoothly, plain brie melts beautifully but has no bite, and mozzarella turns rubbery. If you only have crumbles, 2 minutes under the broiler gets them close.

Can you make these wings without a grill?
Yes. 425°F oven on a wire rack over a sheet pan, 40 to 45 minutes, flipping once. Broil 3 minutes at the end for crisp skin, then add the cheese as soon as they come out. An air fryer works too at 400°F for 22 to 25 minutes.

Are grilled wings healthier than fried wings?
Grilling renders the fat out and lets it drip away instead of adding more, so yes, meaningfully. This version also skips the sugary sauce entirely — the flavor comes from herbs and balsamic instead.

What seasoning is good on chicken wings?
Anything with real aromatic depth that stands up to high heat. Garlic, rosemary, oregano, fennel, and chili work especially well on the grill because they bloom rather than burn. The catch is freshness: ground herbs lose their volatile oils within months, which is why most cabinet seasoning tastes like dust on a wing.

What do you serve with balsamic wings?
Something acidic to cut the fat. Grilled radicchio, a plain arugula salad with lemon, or roasted potatoes tossed in the same seasoning.

How do you make wings spicy?
Spicy Italian Grandma already has Calabrian chili in it. For background heat, add extra chili flakes to the marinade so it works into the meat overnight. For a sharper, brighter hit, scatter them over the top right before serving.
