🔥 Lucky Cajun Chicken Jambalaya Recipe
Ingredients:

20 oz boneless, skinless chicken thighs (chopped)

1 white onion, diced

1 green bell pepper, diced

1 stalk celery, diced

1 head garlic, finely chopped

2 bay leaves

3 to 4 tsp Lucky Cajun Black Beard’s Smoke seasoning

2 cups basmati rice
-
4 cups chicken stock
-
4 green onions, sliced (reserve green tops for garnish)

4 tbsp oil

1 tbsp flour
Instructions:
🔥 1. Prep Your Ingredients – Chop all veggies into ½-inch pieces and finely mince the garlic. Slice green onions, setting the green tops aside for garnish.
🔥 2. Make the Roux – Heat 2 tbsp oil in a cast iron pot or oven-safe Dutch oven over medium heat. Stir in flour and cook, stirring constantly, until it turns darker than peanut butter—this adds deep, rich Cajun flavor!
🔥 3. Sauté the Veggies – Add onion, bell pepper, celery, and garlic to the roux. Cook until softened and slightly browned.
🔥 4. Brown the Chicken – Stir in chopped chicken thighs and 2 tsp of seasoning. Add the remaining 2 tbsp oil and cook until the meat is nicely browned.
🔥 5. Add the Rice & Stock – Pour in chicken stock, bay leaves, rice, and 1 more tsp of seasoning.
Two Ways to Cook It:
👉 Stovetop: Bring to a simmer, cover, and let cook for 20-25 minutes until the rice absorbs the liquid but remains saucy.
👉 Oven: After adding the stock and rice, cover the pot and bake at 350°F for 25-30 minutes until the rice is tender and fully cooked.
