1 whole chicken (3 to 4 lbs)

2 oz butter, softened

½ lemon

A few sprigs of fresh thyme

8 oz red wine (white or rosé works too)
Instructions:

Preheat the Oven – Set your oven to 400°F (200°C).

Prepare the Chicken – Pat the chicken dry with paper towels. In a small bowl, mix the softened butter with the seasoning. Rub this mixture all over the chicken, ensuring even coverage.

Roast at High Heat – Place the chicken in a full-size roasting pan and roast for 25 minutes at 400°F.
