This grilled chicken dish is bold, bright, and perfect for summer. Paired with seasonal veggies, grilled lemon, and a punch of feta and pistachios, it’s everything you want in a fresh, flavorful meal.
🧂 Ingredients:

4 medium chicken leg quarters

Extra virgin olive oil

1 lemon, halved

1 large onion, cut into thick ½” rounds

2–3 zucchinis, sliced lengthwise into thick strips

2 tbsp chopped pistachios

1 oz feta cheese

A splash of balsamic vinegar (for brushing veggies)
🔥 Instructions:
1. Marinate the Chicken
Sprinkle each side of your chicken leg quarters with 1 tsp Greek Out!!, drizzle with olive oil, and rub it in thoroughly.
Tip: Marinate overnight for the most flavor.
2. Prep the Veggies

Slice zucchinis lengthwise into thick strips.

Cut onion into thick ½” rounds.

Lightly coat both with olive oil and season generously with Greek Out!!

Set aside.
3. Fire Up the Grill
Preheat your grill to medium-high.
If you’re using wood or charcoal, let the flames die down and the coals settle into a hot bed. (Bonus: wood fire adds amazing flavor.)
4. Grill the Veggies
Start with the vegetables. Grill until they get nice char marks and begin to soften. Remove and set aside.
5. Grill the Chicken
Place chicken skin side down, but not directly over the flame to avoid flare-ups.
Grill with the lid closed, flipping every 5–6 minutes.
Cook until the skin is crisp and a knife near the thigh bone shows clear juices.
6. Grill the Lemon
Brush the lemon halves with olive oil and place them cut side down on the grill for a few minutes until lightly charred.
7. Finish the Veggies
Brush the grilled zucchini and onion with a small amount of balsamic vinegar and return to the grill for 1–2 minutes to lightly glaze.
8. Plate & Serve

Arrange the veggies on a platter and top with feta cheese, chopped pistachios, and a drizzle of olive oil.

Serve the grilled chicken alongside.

Squeeze the grilled lemon over the chicken just before serving.
