A bold, buttery chutney that brings together sweet corn, caramelized veggies, and a spicy kick of What a Jerk seasoning. It’s the perfect topping for grilled chops, sausages, hot dogs, and even layered into a melty grilled cheese.
🧂 Ingredients:
- 3 cups fresh corn (cut off the cob)
- ½ white onion, small diced
- 1 green bell pepper, small diced
- 1 small can diced tomatoes (drained)
- 4 tablespoons butter
- 1½ teaspoons What a Jerk seasoning
- 1 tablespoon apple cider vinegar
- 2 tablespoons brown sugar
🔥 Instructions:
1. In a large skillet, melt butter over medium heat. Add corn, onion, and green bell pepper.
2. Sauté until vegetables are tender and caramelized, stirring occasionally. You want deep browning on the bottom of the pan — that’s flavor!
3. Stir in What a Jerk seasoning and toast it with the veggies for about 1 minute.
4. Add the diced tomatoes, brown sugar, and apple cider vinegar.
5. Scrape up the browned bits from the bottom of the pan and simmer until the mixture becomes thick, sticky, and almost dry.
6. Let cool slightly before serving.
