🔥 Jerk Shrimp Poboy Sandwich with Garlic Mayo
Spicy. Bold. Not your average poboy.
This sandwich is the best of both worlds — a classic shrimp poboy meets the island heat of jerk shrimp. No frying needed, no overcooking allowed. Just big flavor, juicy shrimp, and a garlicky kick to tie it all together.
🛒 Ingredients
For the Shrimp:

8 shrimp (30–40 count per pound)

1 Tbsp Lucky Cajun What A Jerk? seasoning

1 Tbsp neutral oil (for mixing with shrimp after seasoning)
Shrimp tip: The “count” tells you how many shrimp are in a pound. So 30–40 count = about 40 shrimp per pound. Sounds “colossal,” right? But let’s be honest... shrimp are tiny.
For the Garlic Mayo:

1 cup mayo

1/4 cup extra virgin olive oil

Juice of 1/2 lemon

1 large garlic clove, finely chopped

1/2 tsp Lucky Cajun Black Label seasoning
For the Sandwich:

1 soft French loaf (7–8 inches), cut lengthwise but not all the way through — keep that hinge intact

2 medium leaves of lettuce, cut into ribbons

A few slices of fresh tomato

A few slices of red onion
🔥 Instructions

Season the Shrimp
In a bowl, toss the shrimp with What A Jerk? seasoning and 1 Tbsp of oil. Make sure each shrimp is well coated. -
Mix the Garlic Mayo
Combine mayo, olive oil, lemon juice, chopped garlic, and Black Label in a food processor or bowl. Blend or whisk until creamy and smooth. -
Cook the Shrimp
Heat a pan over medium-high. Once hot, sear shrimp for 20–25 seconds per side — just until cooked through. Don’t overdo it — overcooked shrimp are rubbery and sad. -
Assemble Your Sandwich

Slather garlic mayo on both sides of your fresh French bread (don’t toast it — soft and fresh is key).

Add lettuce ribbons, tomato, and onion.

Top with hot jerk shrimp.
