Marinated Quick Pickle Onion and Quick Pickle Onion Tartar

What you'll need:
2 cups thin sliced onion or shallot
1/2 cup water
3/4 cup white or red wine vinegar
Heaping spoon full of local honey
2 teaspoons Lucky Cajun
A few sprigs of fresh herbs
How to:
Place everything in a glass jar, stir, shake, and let sit in the fridge overnight.
Quick Pickled Onion Tartar Sauce Recipe
Perfect to jazz up fried fish, crab cakes, boiled shrimp, crudité, french fries, and sandwich dressings
Ingredients:
- 1/2 pickled onion, strained
- 1 tablespoon of pickling liquid
- 1 1/2 cups of mayo
- 1/4 cup of chopped fresh flat-leaf parsley
- 3 heaping tablespoons of fresh dill
- 3 heaping tablespoons of fresh tarragon
- 2 teaspoons of Lucky Cajun Black Label
Steps:
1. Strain the pickled onion.
2. Finely chop the parsley, dill, and tarragon.
3. In a bowl, combine the strained onion, chopped herbs, mayo, and pickling liquid. Stir until well mixed.
4. Season with 2 teaspoons of Lucky Cajun Black Label.
5. For a smoother texture, you can puree the mixture in a food processor.
6. Serve with your favorite dishes and enjoy!
