Red Beans and rice

Red Beans and Rice Recipe Ingredients:

• 1 pound Kidney Beans, soaked overnight

• 1 large green bell pepper, diced

• 1 medium onion, diced

• 1 stalk of celery, diced

• 1/4 cup chopped fresh garlic

• 2 oz butter

• 16 oz andouille or Tasso (optional for vegetarians)

• 2 bay leaves

• 6 cups Salt-Free broth/stock (or use Salt-Free Lucky Cajun seasoning)

• 2 tablespoons Lucky Cajun Voodoo seasoning

Instructions: 1. In a pot, sauté diced vegetables and meat in butter until browned.

2. Add stock, drained beans, and bay leaves.

3. Pressure cook for 80 minutes in an Instant Pot, or adjust time for traditional pressure cookers.

4. If not cooking under pressure, simmer for 2 hours until beans are tender.

5. Season to taste with Lucky Cajun Voodoo seasoning or Salt Free seasoning.

6. Serve with rice.

Note: Browning the veggies is the most labor-intensive step in this simple recipe.
