Lucky Cajun Blackened Chicken

Thoughts

I think you can do this in your house if you have decent ventilation. If you don’t either do it at a lower temp or do it outside.

There are simple suggestions in directions to make sure everyone has a smoke free home.

You can literally blacken any protein you like. Pork, fish and steaks all the love being blackened with Lucky Cajun.

Ingredients and tools

Butter or oil

Boneless chicken breast or thighs

Pick your seasoning. You can go medium (Black Label), spicy (Voodoo) or HOTT(Datil).

Cast iron skillet or other heavy bottom pan will work just fine.

Tongs

Directions

Season chicken liberally with Lucky Cajun. 1/2 to 1 tablespoon of seasoning per side of each piece of chicken. Let sit for 20 minutes.

Heat skillet to medium to medium high heat.

Place butter or oil in pan. Add chicken with tongs and let it sizzle.

If it’s getting to smoky take your pan outside or turn down the heat.

If you got the desired level of blackening on your chicken but it isn’t cooked thru.

Finish it in the oven on a sheet pan or in the skillet.
