Lucky Cajun Cubano

Lucky Cajun Cubano Recipe

Ingredients:

- 1 loaf of Cubano bread (substitute with French loaf if necessary)

- Sliced ham

- Yellow mustard

- Pickles (your favorite kind)

- Sliced Swiss cheese (or any melty and tasty cheese of your choice)

- Butter (for grilling)

- Marinated Pork Loin:

- 2 pounds pork loin, tenderloin, or pork butt, sliced

- 4 large garlic cloves, chopped

- 2 tablespoons fresh chopped oregano

- Juice of 1 orange

- Juice of 1 lime

- 2 tablespoons Lucky Cajun Voodoo or Black Label seasoning

- Splash of olive oil

Instructions:

1. Marinate the Pork:

- In a bowl, mix together the chopped garlic, chopped oregano, orange juice, lime juice, Lucky Cajun Voodoo or Black Label seasoning, and a splash of olive oil.

- Place the sliced pork loin in the marinade, ensuring it's well coated. Let it marinate for several hours in the refrigerator.

2. Grill or Sear the Pork:

- After marinating, grill or sear the pork pieces until they're cooked through and have a nice browning on the outside. Set aside.

3. Prepare the Sandwich:

- Cut the Cubano bread loaf horizontally, creating a top and bottom half.

- Spread yellow mustard on both halves of the bread.

- Layer the sliced Swiss cheese, ham, pickles, and grilled/seared pork slices on one half of the bread.

4. Assemble the Sandwich:

- Place the other half of the bread on top to close the sandwich.

5. Grill the Sandwich:

- Heat a pan over medium-low heat and add a bit of butter.

- Once the butter has melted, place the assembled sandwich in the pan.

- Butter the top of the bread.

- Grill the sandwich on both sides until the bread is crispy and the cheese is melted, pressing down gently with a spatula to ensure even cooking.

6. Serve:

- Once the sandwich is golden brown and crispy on both sides, remove it from the pan.

- Cut the sandwich into halves or quarters, and serve hot.

Notes:

- This recipe is for quick preparation. For a more tender and flavorful pork, marinate a whole pork butt overnight, using three times the amount of marinade. Slow cook in the oven at 300°F for several hours until tender.
