Beef Debris Po Boy

🍽️ **Instant Pot Beef Debris Po'Boy**

**Ingredients:**

- 2.5 pounds beef chuck, cubed into 1-inch pieces

- 2 tablespoons butter

- Lucky Cajun seasoning (to taste)

- 3 medium carrots, peeled and sliced

- 2 celery stalks, sliced

- 1 medium onion, diced

- 1 bottle (750 ml) red wine

- 1 tablespoon fresh rosemary, finely chopped

- 1/4 cup Worcestershire sauce

- 1 tablespoon hot sauce

- French bread loaf

- Mayonnaise

- Lettuce

- Tomato

**Instructions:**

1. Heat your Instant Pot in sauté mode. Melt butter in the pot and add beef cubes. Sprinkle with Lucky Cajun seasoning, browning the beef on all sides. Once browned, remove beef and set aside.

2. In the same pot, add carrots, celery, and onion. Sauté until dark brown and caramelized, stirring occasionally.

3. Return beef to the pot. Pour in red wine, Worcestershire sauce, chopped rosemary, and hot sauce. Stir well to combine.

4. Bring the mixture to a boil, then reduce heat slightly. Allow it to simmer for a few minutes to intensify flavors.

5. Lock the lid onto the Instant Pot and set the valve to the sealing position. Cook on high pressure for 35 minutes.

6. Once cooking time is complete, allow pressure to release naturally for 10 minutes, then manually release any remaining pressure.

7. While beef is cooking, prepare Po'Boy toppings. Split open French bread loaf and dress with mayonnaise, lettuce, onion, and tomato.

8. Using a slotted spoon, place tender beef onto prepared French bread. Drizzle with some flavorful juices from the Instant Pot.

**Optional:** For a vegetarian version, substitute 3.5 pounds of oyster mushrooms for beef cubes and follow the same instructions or serve over grits, rice, or mashed potatoes with french bread.
