Grilled Pork Tenderloin Tacos with Pickled Onions, Avocado Cream, Roasted Tomato Salsa & Mango Sauce - Lucky Cajun Hand Made Seasoning

Made with Lucky Cajun Taco Tuesday – Clean Taco Seasoning That Actually Tastes Good

🌮 Why This Recipe Works

Let’s be real—everybody loves tacos. But not everyone feels good after eating them. Most store-bought taco seasoning packets are full of sugar, thickeners, and mystery ingredients. You deserve better.

That’s where Lucky Cajun’s Taco Tuesday comes in:

No sugar

No gluten

No fillers—just real flavor

Each bag gives you multiple meals, far more than those one-use store packets—and tastes way better too. This recipe proves how clean taco seasoning can upgrade your taco night with layers of bold, fresh flavor.

🔥 Ingredients

For the Pork Tacos

1 lb pork tenderloin, sliced into ¼-inch thick pieces

1 to 1½ tbsp Lucky Cajun Taco Tuesday

1 tbsp olive oil

Quick Pickled Red Onions

1 small red onion, thinly sliced

½ cup red wine vinegar

¼ cup water

1 tbsp honey

Pinch of salt

Avocado Jalapeño Cream

1 ripe avocado, peeled and seeded

1 cup sour cream

Juice of 1 fresh lime

½ fresh jalapeño (seeded)

½ cup fresh cilantro (optional)

1 tsp Lucky Cajun Jalapeño seasoning

Roasted Tomato Salsa

2 cups cherry tomatoes

1 small white onion, diced

2 garlic cloves, chopped

1 tsp Lucky Cajun Taco Tuesday

1 tbsp olive oil

Squeeze of lime

Water (optional)

Mango Sauce

1 large or 2 small ripe mangos

1 tsp fresh garlic, minced

Pinch of salt

Squeeze of lime juice

To Serve

Tortillas (corn or flour)

Fresh cilantro (optional)

The Green Boss hot sauce (optional)

🔪 How to Make It

1. Marinate the Pork

Coat pork slices with Taco Tuesday and olive oil. Let marinate for at least 2 hours or overnight for deeper flavor.

2. Pickle the Onions

Stir together vinegar, water, honey, and salt. Add thinly sliced onions and let sit for 2+ hours (or overnight). Thin slices soften faster.

3. Make the Roasted Tomato Salsa

Toss cherry tomatoes, diced onion, and chopped garlic with olive oil and Taco Tuesday.

Broil on a sheet pan until tomato skins are blistered and slightly charred, turning as needed.

Let cool slightly, then blend with a squeeze of lime.

    • If too thick: add a splash of water.

    • If too thin: simmer on the stove to thicken.

4. Avocado Jalapeño Cream

Blend avocado, sour cream, lime juice, jalapeño, cilantro (if using), and Jalapeño seasoning until smooth. Serve fresh.

5. Mango Sauce

Peel and slice mango flesh away from the pit. Blend with garlic, salt, and lime juice until smooth.

6. Grill the Pork

Grill tenderloin slices over medium-high heat for 2–3 minutes per side until cooked through and slightly charred.

7. Toast the Tortillas

Warm tortillas directly on the grill or in a dry skillet until soft and lightly charred.

🌮 Build Your Tacos

  1. Start with a spoon of Roasted Tomato Salsa

  2. Add grilled pork slices

  3. Top with Avocado Jalapeño Cream

  4. Add a spoon of Mango Sauce

  5. Finish with Pickled Onions

  6. Garnish with cilantro and a dash of The Green Boss hot sauce (optional)

🔁 Want a Quick Ground Taco Option?

Brown 1 lb of ground meat (beef, turkey, or plant-based)

Stir in 1 to 1½ tbsp Taco Tuesday

Optional: Add a splash of salsa, beer, or stock and simmer until saucy

Use for tacos, burritos, or nachos—clean, fast, and flavorful.

💡 Why Choose Lucky Cajun Taco Tuesday?

No sugar. No gluten. No fillers.

Big flavor in small amounts

Way more servings per bag than store-bought packets

Handcrafted for real home cooks

Tacos just got their groove back—clean, bold, and better than ever.
